ASÍ ES 5 GALLOS, EL RESTAURANTE CON TRADICIÓN VASCA Y SABOR MEXICANO QUE TRIUNFA EN MADRID

Si andas por Madrid y te apetece descubrir un sitio nuevo, diferente y con una historia que merece la pena conocer, apunta este nombre: 5 Gallos. Acaba de abrir sus puertas en pleno barrio de Salamanca, en la calle Diego de León 24, y no es un restaurante cualquiera. Detrás de este proyecto hay cinco jóvenes socios y amigos, de entre 27 y 30 años, que se conocieron en la universidad de Deusto y que comparten raíces vascas y mexicanas. Vamos, que han crecido entre txakolis y tacos, y eso se nota (para bien) en todo lo que hacen.

La idea es sencilla pero poderosa: mezclar lo mejor de dos mundos. Por un lado, la tradición vasca, con ese respeto casi sagrado por el producto, la técnica y la temporada. Por otro, la intensidad, los sabores y el carácter festivo de México. El resultado es una cocina que ellos mismos definen como "de raíz vasca y alma mexicana", y que te atrapa desde el primer bocado.

If you're in Madrid and fancy discovering somewhere new, different, and with a story worth telling, jot down this name: 5 Gallos. It has just opened its doors in the heart of the Salamanca district, at 24 Diego de León Street, and it's not just any restaurant. Behind this project are five young partners and friends, aged between 27 and 30, who met during their university years at Deusto and share Basque and Mexican roots. In other words, they grew up between txakolis and tacos, and you can tell (in a good way) in everything they do.

The idea is simple but powerful: mixing the best of two worlds. On one hand, Basque tradition, with that almost sacred respect for produce, technique, and seasonality. On the other, the intensity, flavours, and festive character of Mexico. The result is a cuisine they themselves describe as "Basque in its roots, Mexican at heart," and it grabs you from the very first bite.



Una carta para compartir y disfrutar sin prisas

Olvídate de cartas interminables. Aquí apuestan por una selección corta, pensada para compartir y para disfrutar con calma. La cocina está liderada por el chef Andoni Alzugaray, formado en la prestigiosa escuela de Luis Irizar, que ha sabido crear platos donde la tradición vasca se encuentra con ingredientes y matices mexicanos. Entre los imprescindibles, el Taco Baja (inspirado en La Paz y con salsa de la casa), la Pluma Ibérica para Taquear con aguacate y pico de gallo, o la Txuleta de Vaca Vieja con pimientos del piquillo confitados. Y para los amantes de los clásicos, su versión de la Gilda, ese pintxo vasco de toda la vida, pero con su propio toque. Todo elaborado prácticamente desde cero, con producto español de pequeños productores y mucho oficio.

A menu made for sharing and enjoying without rushing

Forget endless menus. Here they go for a short selection, designed for sharing and for enjoying calmly. The kitchen is led by chef Andoni Alzugaray, trained at the prestigious Luis Irizar cooking school, who has managed to create dishes where Basque tradition meets Mexican ingredients and nuances. Among the must-tries are the Taco Baja (inspired by La Paz and with the house sauce), the Pluma Ibérica for Taqueo with avocado and pico de gallo, or the Txuleta of Old Cow with confit piquillo peppers. And for lovers of the classics, their version of the Gilda, that lifelong Basque pintxo, but with their own twist. Everything made practically from scratch, with Spanish produce from small producers and plenty of craft.



Coctelería con identidad y una bodega muy personal

Pero si algo hace especial a 5 Gallos es su apuesta por la mixología. La encargada de la coctelería es Amaia Fernández, una joven mexicana de orígenes donostiarras que ha creado una carta donde conviven los clásicos de siempre con creaciones propias inspiradas en México. Entre sus signature cocktails destacan la Mezcalita Tío Teddy (con mezcal ahumado y puré de guayaba, un homenaje al famoso Boing mexicano), el Mexican Slipper (una vuelta de tuerca al Japanese Slipper, pero con mezcal en lugar de Cointreau) o el Pinche Cóctel (con tequila cristalino, Aperol, cítricos, agua con gas y cava). También hay sitio para los clásicos como el Daiquiri, el Negroni o la Pornstar con pisco, y para los imprescindibles mexicanos: Paloma, michelada o carajillo norteamericano con Licor 43. Y si no bebes alcohol, tienen su propia agua de Jamaica elaborada con flores de hibisco. Un detalle que habla muy bien de lo que se preocupan por todos.

La bodega no se queda atrás. Apuestan por vinos reconocibles de Rioja, Ribera del Duero, Toro o Aragón, con un guiño obligado a sus raíces vascas a través de los txakolís. Y uno de los elementos más especiales es su propio vino de la casa: un Tempranillo elaborado y embotellado en exclusiva para 5 Gallos por un pequeño productor de Rioja Alta Alavesa. Un capricho que dice mucho de su filosofía.

Cocktails with identity and a very personal wine cellar

But if anything makes 5 Gallos special, it's their commitment to mixology. The person in charge of the cocktails is Amaia Fernández, a young Mexican woman with Donostiarra roots who has created a menu where the usual classics coexist with her own creations inspired by Mexico. Among her signature cocktails are the Mezcalita Tío Teddy (with smoky mezcal and guava purée, a tribute to the famous Mexican Boing), the Mexican Slipper (a twist on the Japanese Slipper, but with mezcal instead of Cointreau), and the Pinche Cóctel (with cristalino tequila, Aperol, citrus, sparkling water, and cava). There's also room for classics like the Daiquiri, Negroni, or Pornstar with pisco, and for Mexican essentials: Paloma, michelada, or carajillo norteamericano with Licor 43. And if you don't drink alcohol, they have their own agua de Jamaica made with hibiscus flowers. A detail that speaks volumes about how much they care about everyone.

The wine cellar is no slouch either. They bet on recognisable wines from Rioja, Ribera del Duero, Toro, or Aragón, with an obligatory nod to their Basque roots through txakolís. And one of the most special elements is their own house wine: a Tempranillo made and bottled exclusively for 5 Gallos by a small producer from Rioja Alta Alavesa. An indulgence that says a lot about their philosophy.



Un espacio que cambia con la noche

Con solo 33 comensales, el restaurante apuesta por un servicio cercano, atento y basado en la hospitalidad mexicana. Pero lo mejor es que el espacio evoluciona con las horas. Pasa de ser un lugar para cenar a convertirse en un sitio perfecto para tomar los primeros cócteles, todo ello con una música protagonizada por los grandes éxitos de los 80. Un ambiente que invita a quedarse y a alargar la noche sin prisas.

El interiorismo, diseñado por Alicia Agosti, refleja esa dualidad entre sofisticación y espontaneidad. Materiales nobles como el nogal, el mármol y el latón se combinan con un mural geométrico del artista Teddy Kelly y una paleta de tonos tierra, rojos y burdeos. El resultado es un espacio cálido, elegante y con un toque canalla, perfecto para una cita, una cena con amigos o simplemente para descubrir algo nuevo en la zona de moda de la capital.

En resumen, 5 Gallos no es solo un restaurante. Es un punto de encuentro donde el producto, la cocina, la coctelería y la atmósfera se unen para crear una experiencia completa. Si te apetece viajar de Madrid al País Vasco y a México sin moverte de la mesa, ya sabes dónde ir.


A space that changes with the night

With only 33 diners, the restaurant bets on close, attentive service based on Mexican hospitality. But the best part is that the space evolves with the hours. It goes from being a place for dinner to becoming a perfect spot for the first cocktails, all with music featuring the greatest hits of the 80s. An atmosphere that invites you to stay and stretch the night out without rushing.

The interior design, by Alicia Agosti, reflects that duality between sophistication and spontaneity. Noble materials like walnut, marble, and brass are combined with a geometric mural by artist Teddy Kelly and a palette of earth tones, reds, and burgundies. The result is a warm, elegant space with a rogueish touch, perfect for a date, dinner with friends, or simply to discover something new in the trendiest part of the capital.

In short, 5 Gallos is not just a restaurant. It's a meeting point where produce, cuisine, cocktails, and atmosphere come together to create a complete experience. If you fancy travelling from Madrid to the Basque Country and to Mexico without leaving your table, now you know where to go.
