Cuando vayas al barrio de La Latina, y pasees por sus calles no dejes de pasarte por uno de los cafés con más encanto que vas a encontrar en todo Madrid, se llama el El Perro de Pavlov, un pequeño local que, os lo garantizo, llamará vuestra atención.
Está en la calle Costanilla de San Pedro 5 y es inconfundible por su pequeño banco de madera a la entrada y sus maravillosos azulejos del interior. Todo envuelto en un aire retro que hace que disfrutes aún más de sus especialidades.
Además de ofrecer un café de especialidad de gran calidad, que obtienen de Randall Coffee y varían según su estacionalidad, este rincón se ha ganado la fama por sus Chai Latte que tiñe en diferentes tonalidades como la rosa, a partir de remolacha o la amarilla, que procede de la cúrcuma. Pero ahí no acaba la cosa, sus desayunos se pueden completar con su repostería casera, también pensada para vegetarianos y veganos, o alguna de sus tostadas: la que más triunfa es la de hummus de remolacha.
El cafe es un espacio‘dogfriendly’cuyas paredes, con diferentes obras temporales, son un escaparate para artistas emergentes del barrio.

Located at 5 Costanilla de San Pedro Street, it is quite unmistakable due to its small wooden bench at the entrance and its wonderful tiles inside. All wrapped up in a retro atmosphere that makes you enjoy its delights even more.
Not only does it offer a high quality specialty coffee, obtained from Randall Coffee and changing by season, but this spot has gained fame for its Chai Latte which is dyed in different colours such as pink, from beetroot, or yellow, which comes from turmeric. Breakfast can be completed with homemade pastries, also for vegetarians and vegans, or some toast: the most popular is the beet hummus.
The café is a 'dogfriendly' space whose walls, with different temporary works, are a window for emerging artists from the neighbourhood.

Su experimento no tiene nada que ver con el café, pero sí con la imagen mental que Alejandro, el dueño del local y psicólogo de carrera, quiere hacer de su cafetería. El ruso hacía sonar siempre una campana repetidas veces antes de dar de comer a un perro. Con ello consiguió que el animal salivase únicamente con el sonido de esa campana, sin necesidad de estar asociada a la comida.
Aparte de la obvia relación que une la historia con la parte profesional de Alejandro, si lo trasladamos al negocio, la metáfora reside en que“si vienen varias a veces (a la cafetería) , al final terminan pensando en esto y empiezan a salivar, esa era la gracia”, cuenta entre risas.
I guess by now you're wondering who Pavlov is and where that dog thing came from. Well, Ivan Pavlov was a Russian psychologist, the architect of so-called classical conditioning.
His experimentation has nothing to do with coffee, but it does have something to do with the mental image that Alexander, the owner of the place and a professional psychologist, wants to make of his café. The Russian always rang a bell repeatedly before feeding a dog. By doing so, he managed to make the animal salivate only at the sound of that bell, without the need to be associated with the food.
Apart from the obvious relationship between the story and Alejandro's professional life, if we translate it to the business, the metaphor is that "if they come several times (to the cafeteria), they finally end up thinking about it and start salivating, that was the fun of it," he says while laughing.
Se nota que El perro de Pavlov es una cafetería que nació de una ilusión y es por eso que se ha convertido en un lugar al que acudir para desconectar, un espacio en el que sentarse y disfrutar de un buen café o té acompañado con un trozo de pastel o una deliciosa tostada.
